Lunch at Principle Cafe Mount Austin. We ordered the Four Cheese Pizza and added smoked duck as a topping.
What stood out first was the crust. They use sourdough for the pizza base, which gave it a noticeably chewier texture than a more conventional Neapolitan-style dough. It also seemed a little less airy to me, with more density through the crust.

That is not necessarily a bad thing.
If you like a pizza with more chew and substance, this works.

The cheeses were excellent.

There was enough richness and savouriness to make the pizza satisfying on its own, and the smoked duck added another layer without feeling like a token topping. They were generous with it too.
That was important because smoked duck can disappear into a strongly flavoured cheese pizza if there isn’t enough of it. Here, it held its own. The duck also brought a slightly smoky, meaty character that worked well against the creaminess of the cheese.

We also had the Sea Salt Latte, which was a good drink. The menu describes it as espresso with oat milk and aromatic brown butter, finished with a sea salt cream.

That combination explains why it works.
The salt softens the sweetness and makes the coffee taste a little more rounded, while the brown butter adds a richer, toastier note.
