At Mandarin Cafe. To my dear friends down south. This is otak otak not otah. It’s steamed not grilled. It is creamy and has a chunk of fish not a glob of chilly rempah with fish paste. The taste is delicate with turmeric n spice with a hint of chilly, fragrant with lemon grass and daun kadok, and not just salty and fiery red hot. It is eaten fresh, you can chill and keep a couple days at most and never frozen.
Ini lah otak otak utara. And the only place down south you can get something better than this is when I cook my upsize version with prawns, quartered flower crabs, sotong and parrot fish fillet.
