Butter Chicken, Pork-Free
A particularly vivid memory of the food from Mr. Specky Tomyam Seafood Restaurant was when it was delivered to us when we were holed up at the AC. Pouring rain had trapped us in a flooded Kuantan and the highway had been closed. However that delicious hot meal from down the road was heaven delivered to our room. We went over for supper last night and this butter chicken had such a great, nutty flavour. The basil leaves came through with just a hint of spice. It was so good.
Butter chicken is a popular dish served in Malaysian restaurants that is adapted to suit local tastes. Malaysian-style butter chicken typically consists of boneless chicken that has been marinated in a blend of spices, including turmeric, cumin, and coriander. The chicken is then grilled or roasted until it’s tender and flavorful.
The sauce for Malaysian butter chicken is creamy and rich, made with a combination of butter, cream, and a tomato-based sauce that’s flavored with a variety of spices like cumin, cinnamon, and cardamom. The sauce has a mild and slightly sweet taste with a subtle hint of spiciness.
Unlike traditional Indian butter chicken, the Malaysian version usually doesn’t have a smoky flavor from being cooked in a tandoor oven. Instead, the chicken is typically grilled or roasted separately before being added to the sauce.
