I recommend to everyone my top-ranked Hokkien noodle spot, situated in the residential area of Jinjang. It’s not easy to find as there isn’t a big signboard. The owner, who is also the chef and second-generation inheritor, has carried forward his mother’s culinary skills. I love their Hokkien noodles because they remind me of the nostalgic flavors. The use of pork liver and pork intestines is becoming rarer in Hokkien noodles these days, but here they are still included. The noodles are thoroughly infused with flavors, and the fresh pork lard elevates the entire dish to an unforgettable level. I absolutely adore it.
