Chai kueh that we come across are usually roundish and sometimes oblong but squarish ones are very seldom found. This small stall operated by Ms Kee in a roadside coffee shop, BC Coffee Shop, in Kampung Permatang Tinggi serves these 'pillow' chai kueh.
BC Coffee Shop is located by the side of the road, in front of the Volunteer Fire Brigade station.
Not only are the chai kueh squarish, the way they are prepared is also different. Most chai kueh are moulded by hand and cooked in a double decker steamer. Ms Kee prepares her chai kueh on a special linen-covered steamer. She folds the four sides of the chai kueh skin over the fillings to produce the squarish and pillow shaped chai kueh. Yours truly was a little late there, all Ms Kee could offer me was just these four pieces of chai kueh. Will be back for more very soon.

It is certainly one of the freshest chai kueh we can find in Penang.
On weekdays, mangkuang (jicama) and ku chai (chives) chai kueh are available. There are two additional varieties, pumpkin and yam, on weekends. Price list - Mangkuang (jicama), Ku Chai (chives) and pumpkin all at RM1.30 per piece. Yam costs RM1.60. Extra 20 sen for the takeaway plastic container. To avoid the usual long wait, we can call to order in advance.
Ms Kee, the humble and friendly proprietress who produces a 'rare' type of chai kueh. It's truly a hidden gem indeed!
