Pablo Bistro on L.P. Leviste Street emerges as a haven for those seeking a culinary journey through the world of tapas. The restaurant's ambiance sets the stage for an intimate dining experience, with its warm and inviting decor. The artfully crafted space and subdued lighting create an atmosphere that seamlessly complements the culinary treasures awaiting patrons.
Since I was dining alone, I just wanted to sample some of the tapas. The waiter suggested I try the Croquetas de Patata and the Grilled Octopus. The croquetas, were bite-sized morsels, won on tecture. Crisp on the outside and creamy within. However what lay within was actually a disappointment as it lacked any flavour.

Thankfully the Grilled Octopus saved the meal. It arrived with a theatrical flourish under a clear cover emanating a gentle wisp of smoke. The presentation alone was a feast for the eyes. As the cover lifted, the perfectly grilled octopus revealed itself, tender and succulent. The marriage of smokiness and the oceanic essence of the octopus created a symphony of flavours that lingered on the palate.


I paired the tapas journey with a French Chardonnay, Camille De Labrie. The subtle notes of the wine complemented the rich flavours of the Grilled Octopus, creating a harmonious union of taste and elegance.


On exit, they forgot to charge me for the chardonnay. I remedied that by alerting them about their oversight. While they thanked me for it, I did not get a discount for my honesty.
