Banh Mi
Sometimes, what makes a dining experience memorable isn’t necessarily the food. It’s the person serving you. That was certainly the case at Bánh Mì Mẹ Ỉn in Ho Chi Minh City.

Jen and I decided to try their Original Banh Mi, which came with jambon, pork terrine, pork floss, cucumber, pickles, coriander, chilli and a creamy butter egg sauce.
It was quite a substantial sandwich, with a generous assortment of ingredients packed into the baguette.

One ingredient that stood out was the pork floss. Pork floss is something I’ve noticed appearing in bánh mì around Ho Chi Minh City. It adds another dimension to the filling, particularly its sweetness.

Personally, I prefer my bánh mì without that sweetness. I enjoy the savoury flavours of the meat, the acidity of the pickles and the freshness of the herbs without having sweet pork floss competing for attention.
Nevertheless, I wanted to try their Original Banh Mi as intended rather than asking them to modify it.
The sandwich itself was enjoyable enough, although I would have preferred a more savoury flavour profile.
But the highlight of our visit was Minh.

The restaurant provided disposable gloves for handling the sandwich, which was a thoughtful touch considering how generously filled it was.
Unfortunately, I found myself struggling to open the gloves.
Minh, who was attending to us, noticed my predicament and immediately came over to help.
It was a small gesture, but one that demonstrated something I always appreciate in hospitality: attentiveness.
He didn’t need to be asked. He simply noticed that a customer needed assistance and responded.
That kind of service makes an impression.
And while I might have my preferences about how a bánh mì should taste, there’s no debating the value of someone who genuinely pays attention to the people they’re serving.
Well done, Minh!
The Original Banh Mi – VND75,000
Price includes VAT.
Total: VND75,000
MVX Score: 8.0/10
M – Meal Value
At VND75,000, this is a relatively premium bánh mì by Vietnamese standards. The sandwich was generously filled, although the sweetness from the pork floss wasn’t quite to my preference.
Score: 7.5/10
V – Venue
A casual, colourful Vietnamese sandwich shop with distinctive woven bamboo decorations and a cheerful atmosphere. It offers a comfortable setting for enjoying a bánh mì rather than eating one on the move.
Score: 7.5/10
X – X-Factor
Minh’s attentiveness made the difference. Noticing a customer struggling with something as simple as opening disposable gloves and stepping in without being asked is precisely the sort of service that deserves recognition.
