We were back at Hazuki, a Kyoto-style restaurant serving Kappo cuisine at Ngee Ann city. This time, we had something specific in mind- their grilled eels! Amazing service and the meticulosity of kappo chef Kenta Yamauchi makes all the difference.
We’ve had their Omakase dinners before (which was good), but Kyoto/ Kappo style dining features fabulous cooked dishes; and we had cravings for a particular grilled morsel.
Unlike most Japanese places serving unagi / anago, it usually comes lathered with sweet teriyaki sauce. This wasn’t for us – so chef flavoured the eels with shio and shoyu instead! What a masterstroke. Just by looking at the grill station, you’d know they mean business.
The standout were the eels at 8/10 -the best we’ve had in Singapore, by a mile.

The shabu2 was good at 7/10 but the tempura nearly stole the show – especially their eel and corn fritters 7.5/10


The sashimi was good at 6.5/10 but one could feel that the hot kitchen was the star.

We will be back – for the eels.
Small attention to details – as we eat Japanese quite a fair bit – the braised brinjal in the dashi of my shabu2 was excellent; added to the richness and nuttiness of the flavour. The vegetables / garnish was executed flawlessly- from edible flowers and leaves to the pickled mustard sides – these details make Hazuki stand out for their cooked food.
