Finding myself at Syopz Mall, I was wondering what to eat. loaf & latte offers something a bit more interesting: a front-row seat to Taylor’s Culinary Institute. As a “living classroom” for aspiring hospitality and culinary students, the expectations are naturally that it should be a notch higher than your average campus cafe.

I opted for the Chicken Focaccia. The bread itself was well-made, but the filling left me with mixed feelings. While the chicken was seasoned well and carried a pleasant flavour, it had been diced into such minute pieces that it completely lost its “bite.” In a sandwich where the bread has some structural integrity, you really want the protein to stand its ground; here, the chicken felt a bit lost in the mix. It is a tasty enough lunch, but perhaps a lesson in portion geometry is needed to give the dish the texture it deserves.
