Few dishes can satisfy a hungry person better than freshly cooked claypot chicken rice which is served piping hot. It’s simple, satiating and economical. The claypot chicken rice stall in the Zi Ji Ren Restaurant is one place that does this well.

Zi Ji Ren Restaurant, located at a busy intersection in Kota Permai, Bukit Mertajam.

The standard serving at this stall comes with marinated chicken meat, sliced Chinese sausage, dried salted fish, egg and chopped spring onion. The rice is fluffy and not much is burnt at the bottom. The dark soy sauce, Chinese wine and sesame oil that are added to it brings out the flavour and aroma.

Mr Chan, the humble proprietor has been operating this stall here for the past 18 years.

Tender and flavourful marinated chicken meat, the integral ingredient of the dish.

Dried salted fish and sliced Chinese sausage are the other ingredients added to the rice.

The rice is cooked slowly in small claypots over a low flame.
