Dim Sum, Non-Halal
JU Signatures is the brainchild of Chef Wong Kok Shyong, who has worked at hotels such as The St. Regis Singapore and JW Marriott Jakarta. His last post was at Peony Jade, where he was Group Dim Sum Chef for 15 years.
I was hankering for dimsum after watching Culinary Wars on Netflix last night – inspired by the dimsum queen of Korea, Jung Ji-Sun. Today we decided to give JU at Serangoon (hardly a culinary destination) a try. As is my style – with first time visits – we sample the basics, ie the must haves. For dim sum these would be (to me), things like har gao, siew mai, cheong fun etc.
These came out ok- all at 6.5/10.
We ordered the pineapple bun as it’s another staple of my daughter’s – perhaps the weakest dish today at 6/10. The buns were flaky and crumbled upon touch, and wasn’t warm enough to begin with. I found it a tad messy to eat to be honest.

We had 2 carbs of the day: Yangzhou fried rice and lobster Ee fu noodles. The fried rice is nowhere near Imperial’s but earns a respectable 6.5/10

The lobster noodles on the other hand was a clear winner for me today. Solid 7/10. And at 75% of the usual prices in Orchard, the savouriness of the fried spiny lobster hit a high note. The noodles were full flavoured but a little jarring – not as well balanced.

While the dim sum could have been promising based on their ingredients, aesthetics and flavours, they would have tasted better if they were serving steaming hot – some were room temperate at best.

Total damage SGD123.73 for 4 pax. Given the price quality ratio this comfortably puts JU Signatures at 6.5/10 overall.
