I made my way to Level 4 of Lot 10 to check out the Hide-Chan Ramen pop-up. This is a temporary six-month stint, scheduled to run from August 2025 until February 2026, tucked away in the J's Gate Dining area. Hide-Chan isn't a new name on the global stage; founded by Hideto Kawahara in 1993 in Fukuoka, the brand built a massive reputation in New York City, where it held a Michelin Bib Gourmand for ten consecutive years from 2012 to 2021.

How the Food Ate

I ordered the Original Tonkotsu Ramen (RM28). The history of this dish is steeped in traditional Hakata tonkotsu mastery, using a boiling technique that involves high heat and a two-day brewing process to achieve its signature rich broth.

The bowl arrived with a thick, collagen-rich soup and thin, straight noodles. While the broth was certainly "kau" and packed with traditional flavor, did I have my mind blown? No, I didn't. It is good ramen with options on how you like the firmness of the ramen to be done. It was executed with the precision you expect from a brand with its pedigree, but it didn't quite reach that level of transcendence to justify the immense hype surrounding its arrival. For those who prefer their tonkotsu without MSG, this is a solid choice as I did not detect any MSG in the broth at all.
