The lobster noodles at Paradise Teochew is fabulous! We had the lobster done two ways; the body and tail seared and braised in abalone sauce, and the head and legs went into braised noodles, of a similar sauce. Both dishes were sublime but the noodles was the lesser of the two.
The body and tail – 8/10
The noodles – 7/10

Given it’s a largish crustacean at 1.2kg, the meat was firm and had a springy texture – it wasn’t rubbery , which is the case when it’s overdone. Kudos to the chef.

I know this is yet another rewrite of the same place – but I had to do Chiefeaters’ justice. My style is to go deep and exhaust the menu to find nuggets and gems for the epicurious.
