Recently, I had the privilege of experiencing a sneak peek into the Seasons of Harmony Chinese New Year set at Lai Ching Yuen in Grand Millennium KL in Jan 2024. This delicious feast for the celebration of the Lunar New Year, crafted for a table of 10 persons at RM2,888++, is a symphony of flavours and textures.
Chinese New Year meals must kick off with this dish, of course. The Lunar New Year meal kicked off with a vibrant Yee Sang adorned with jellyfish and Crispy fish skin, a harmonious blend of textures and colours and seasoning.
The Double-boiled Chicken Soup with Dry Scallop, Sea Cucumber, and Cordyceps Flower was a comforting elixir. Brimming with the essence of double-boiled chicken and all the other ingredients, it provided a hearty prelude to the feast.
The Steamed Green Eye Grouper, was perfectly steamed and bathed in an aromatic hot oil. The fish was a mouthful of delicate flavours and texture.
The Baked Iberico Pork Ribs is one of the signature dishes of Lai Ching Yuen. The ribs while crispy, enraptured us with how it remained succulent. The cartilage was a delight to bite into as well. Crunchy yet not so hard that would make it difficult to eat.
The Sea Moss, Dry Scallop, Shredded Mushroom and Garden Greens was so beautifully composed that I almost did not want to eat it.
Bei Fong Tong refers to the unique cooking style where the seafood is first deep fried to develop a crispy golden crust, and then stir fried with copious amount of garlic and condiments to infuse it with seasoning and taste. The Wok-fried King Prawn in “Bei Fong Tong” Style certainly captures all that.
Chinese Wax Meat Rice Wrapped in Lotus Leaf unveils a treasure trove of Chinese wax meat-infused rice—a symphony of flavours and textures. Interestingly, this dish symbolises the wisdom of ancient ancestors.
The grand finale features a dessert double feature. The Crispy Yam Nian Gao and Sweetened Red Bean Soup with Glutinous Rice Ball, bringing a sweet conclusion to this culinary odyssey.
