Teochews are a majority sub-ethnic group in Singapore. Their cooking revolves around the freshest seafood. The steamed tungsinpan we had over the weekend at Paradise Teochew Takashimaya is a thing of beauty. I mean it literally. This dish would be my first 8.5/10 conferred. The cooking style is garlic and soya sauce (we had that before) – but it’s the secret sauce combo that’s a knockout.
Doesn’t come cheap. But if you’ve to have two top dishes in this restaurant – choose a fish (any), and the crab. Thank me later.
