Mak’s Noodle Central is a place that I have been visiting over the past 4 decades. Easily 7.5/10 each visit over this period. Effortlessly consistent, rain or shine. Many would argue there are other/better wanton noodle.
There are many options over the years, but Mak’s is definitely still Top 5, Top 3 even. That may be a relative scale – as wanton noodles is as personal to the tastebuds as adobe, bak kut teh, or even ckt is. But locals (still) vouch for this place.
I grew up on this. This is the definition of wanton noodles for me. I am still amazed at the HK spirit of inventiveness- it’s 5 ingredients mashed into magic. It doesn’t get simpler than this. This is where simplicity = elegance comes from.

There are other places eg with bamboo poles showing how the sifu makes the actual noodle (the original ‘open kitchen’), and those are great too ie consistently above 7/10.
Find your own HK. Find your own wanton noodles. write your own tradition, but I’m guessing for many (millions), Mak’s will be etched in their memories..
The vegetables r consistently superior to what we get down south. This is HK choysum or HK kailan for me. Blanched in hot water and paired with oyster sauce. The soya and oyster sauces they use are distinct.

Even the chilli sauce.
