Went back for Lin Ji’s pork leg rice in Albert Food Centre. Chanced upon the fishball stall next to Lin Ji. It advertises that they’ve sold over a hundred thousand bowl of noodles in Jonker Street, Malacca. That got me curious. We ordered a bowl of fishballs to try - and it came out pretty good 6.5/10.
It’s not the usual ‘factory’ made fishballs you usually get elsewhere in other Singapore food courts. It’s made by hand from yellowtail fish. Unlike the other usual fish (parang or saito yue) for making fishballs - the yellowtail gives these balls more umami without losing much of the ‘bounce’ - watch Stephen Chow’s God of Cookery - you will understand what I mean.
I don’t have the stall’s name (save that it’s right next to Lin Ji)- tbh I wasn’t paying attention until my wife ordered a bowl for us to try.
There’s another fishball old brand name in the Albert Food Centre - Hock Lee. I haven’t had that yet but in the meantime this nameless store (sorry!) weighs in at 6.5/10. Definitely worth a visit if you’re in Bugis.
