When two persons in Bahau recommended me to visit Bahau Tuk Tuk Pork Innards, a roadside stall selling pork innards I know I must give it a try even though I was not hungry.
It is indeed very good. Served with 3 different sauces make up of sweet sauce, chilli sauce and blended ginger sauce. The different parts of pork have nice chewy and tender texture ehich are lightly seasoned. The pickle ginger and century egg give a nice contrast of taste and palette cleansing. I must say I like every bites of it. No wonder it is highly recommended by the locals.
The seller at Bahau Tuk Tuk Pork Innards told me he inherited the recipe from his grandfather. Indeed it is like a legacy in Bahau as at a mention of Xi Tau Pei (“pork head skin” in direct translation) to another ex-Bahauian today it was straightaway acknowledged. May this generations old recipe continue to be passed on so that many more people in future generations can enjoy it.
