Korean BBQ
Kott-Don 360 VivoCity is a Korean BBQ specialist restaurant that boasts premium wet-aged meats. Founded by the team behind Flower Pig 360, they perform their signature “flower-cut” on their meats and age the meat for 360 hours (15 days) to achieve evenness of cooking, tenderness and concentration of the flavours of the meats.
We were excited to try the selection of meats that included Duroc Black Pork, Jeju Black Pork, and Hanwoo Beef (exclusive to the new Vivocity outlet!).
That was before we walked in, and found out our (brand new) grill was not working. The experience spiralled (downwards) thereafter.
The pork set was SGD129 with 4 kinds of cuts – neck to belly. And for SGD1 there was a promo to get a plate of pork belly – a good start it seemed.
As the grill was faulty, our meats had to cooked in a Central Area Рand brought to us. The downside to this Рyou have to rely on the staffs’ control of fire. Not a good sign as the entire restaurant was busy and we could see non dedicated personnel to grill our cuts. Unlike higher end bbq joints where someone dedicated is always table side.
The result? Overcooked pork belly – and we kindly requested the server to try it for himself – he duly replaced another portion. This time we could see a more senior staffer manning the central grill; and it was better. Still overall experience averaged out is a 6/10 for me.
I miss the authenticity of service in Tg Pagar – albeit more humble setups.
No offense to local non Korean servers Рbut something was amiss. The soul perhaps. Overall 6/10 for Kott-Don / their 꽃돼지 360 Flower Pig failed to impress..
