Omakase, Fine Dining
Les Amis Group has just opened a new eatery – Sushi Jin (May 2025). Marketing itself as a Japanese joint, which offers a six star premium dining experience, but at a very reasonable four-star price tag. The best seats – as with any Omakase stalwart – are definitely the ones at the counter, which gives you a close up of Head Chef Raymond at work. We’ll be trying a mix of omakase as well as some a la carte items on the menu. I continue the father daughter Omakase trail. To date we covered 120+
For me Yama course SGD160 Omakase. For my daughter Mori – SGD120.
Firefly squid

bamboo shoots

monkfish liver

Seabream with black truffle

abalone awabi cooked in own sauce

The abalone liver sauce was sublime – mixed with a rice ball by the chef. The greenish stuff- super umami, absorbed into a rice ball. One glorious bite.

Kinmedai, with Japanese turnip , golden eye snapper with prawn dumpling

Ishidai, another snapper family

Shima aji, strip jack

Sawara, Spanish mackerel

Black throat sea perch nodoguro

Japanese white squid with unni – shiro ika

Sea urchin

Ootoro, fatty tuna belly

Foie gras with sea urchin

Hamaguri miso soup. The hamaguri (big clam) soup was delicious. Well done chef Patrick Tan.

Dessert , fruits , strawberry or blueberry

This barley shochu is delectable
