Torno Subito (literal translation: I’ll be right back) is the fun and exciting brainchild of Chef Massimo Bottura. The place is decked out in whimsical sailor colours and wine cellars masked as beach houses. Everything in this restaurant is loud, eccentric, but so tasteful. I’d like to call this the art of Massimo Bottura. His restaurants and concepts are clear as with his design aesthetics. It’s simply gorgeous. Torno Subito is the first outpost in Singapore for Chef Massimo Bottura and I hope this is just the start of his venture in SEA. Unlike the fine-dining concept of Osteria Francescana, Torno Subito is a fine-casual concept and with a playful interior designed by award-winning Italian designer Paola Navone of OTTO Studio.

A nod to the heyday of Italian cinema, the interior takes you back to the Adriatic Riviera circa 1960s. The red-yellow-blue colour scheme is carried through from the walls to the tableware. The concept by celebrity chef Massimo Bottura involves whimsically and creatively harnessing Italian produce in signature dishes like artisan tortellini in a silky sauce made with parmigiano reggiano aged for 36 months. Stone-baked pizzas are delicious.

We started with the Tiger and Beer (SGD33) which pays tribute to the Italian Riviera’s summer classics and seaside kiosks by pairing crispy deep-fried tiger prawns with a “Nazionale” craft beer mayonnaise.

The I Love Pepper Crab (SGD88) was undeniably generous, with fresh Chitarra pasta and small but copious chunks of Alaskan king crab. The Sarawak pepper reduction provided a pleasant kick, but the intensity of the pepper sometimes overpowered the delicate sweetness of the crab. Chives and lime helped lighten the dish. It was on the richer side overall. The pasta 7.5/10

Special shoutout to the Pasta Lenticchie – this was 8/10. The only 8/10 I’ve had this year. Ironically this wasn’t in the main menu – but Chef was willing to make a full serving for us. No regrets move.

The pizza was out of this world too. Like really. 8/10

Kudos to Chef Bottura- the starters to the mains – and mine the crab pepper pasta was exquisite. The balance was exquisite. Starting off, I felt it was a little too spicy, and too forward. A few bites later, the balance of flavours came through.
The cocktails here are next level – in fact the worlds best mixologists will convene here at Torno Subito on Oct 3-4


Desserts continued the theme of “tradition in evolution.” The Tiramisubito (SGD22) offered a modern take on the classic tiramisu, with layers of coffee, mascarpone, and cacao that were both familiar and refined. This is not a traditional tiramisu per se, as the coffee-soaked sponge is replaced with ice cream in this case.
Overall a very strong 7/10 for Torno Subito Dempsey. If you look beyond all the Ferraris on display at the front – the sommelier and kitchen are formidable. Well done Chef Boturra.
