Tsukiji Jisaku serves high-class Kaiseki Cuisine in Tokyo Tsukiji/Ginza. The chicken hotpot was exquisite. The chicken was cooked perfectly- and the broth, made from chicken fats (like bijin nabe!) was out of this world!

I loved how they made congee from the redacted goodness, the essence of the chicken as it were. This chicken congee was slurp for slurp the most umami-packed dish I’ve ever had inside and outside Japan.

Save for the fact everything was transacted in Japanese (thank you Makoto!) I’d make a beeline for this dish. Every time. It’s a hearty meal in itself. This puts the bijin nabe is Tsukada Nojo (Upper Thomson) to shame.
