I visited the iconic coffee shop Yut Kee. I thought it would transport me back to the old days. That kaya toast was just all sorts of wrong. Lumpy, grainy jam - felt like it hadn't been churned properly. Back in my day, kaya was as smooth as butter. Spread nice and even, not this chunky mess. The owner tried telling me that's how they make it now. However, that’s not the way I like it.
Thankfully the Hainanese chicken chop wasn't a complete disappointment. At least the flavours were familiar - tender chicken with the right seasoning. Finally some taste that brought me back!
Everything is so experimental these days. Messing with classic recipes, trying to put their own spin on things. All that does is ruin the flavours we all know and love. Some traditions are meant to stay the same, not be modernized.
