For this Chinese New Year, Union Bistrot presented their Peak of Prosperity set, a well-curated meal meant for six diners. While it provided a satisfying spread, those with larger appetites might consider adding a few selections from their à la carte menu for a more indulgent feast.

The meal began with the Flourishing Vitality Mantou, a delicate brioche topped with foie gras, a rich and indulgent opening that set the tone for the evening.
This was followed by the Beautifying Herbal Chawanmushi, a comforting chawanmushi served with a deeply flavoured chicken broth, a refined take on the classic Japanese steamed egg. Each person had an individual serving of this.
Next came Harvest of the Sea, slivers of cod fish bathed in an XO sauce—pleasantly umami-laden.
Heart of Gold was a clever name for a prawn paste fried in a salted duck egg yolk coating. They were decent.
The highlight of the night for me was undoubtedly the Flavourful Fortune Fillet. This was a fried fish, coated in a Mango salsa and a sweet and sour sauce that had a nice amount of spice in it that perfectly complemented the crispiness of the fish. Every bite was a delight, making this the most memorable dish of the set.
The Truffle Yong Chow Fried Rice with prawns added a touch of luxury, offering fragrant bites of rice enhanced by the aroma of truffle. The prawns were really fresh which added to my enjoyment of it.
The Oolong Smoked Confit, a smoked duck, also left an impression, dramatically unveiled with a flourish of smoke, adding both visual and olfactory appeal.
The Abundant Growth Ensemble was a stir-fried vegetable dish.
The Rejuvenation Symphony, a dessert brought the meal to a close with a red bean paste puff pastry and a warm bowl of snow fungus tong sui, providing a traditional yet satisfying end to the feast.
We were a party of seven so we added some side dishes as well before we started the dinner. Thankfully we booked early, so we were able to secure the private room as well.
