Song Fa Bak Kut Teh has more than 10 outlets (and counting) in Singapore and really doesn’t need any further introduction. Song Fa serves the peppery style of Singapore Teochew bak kut teh. I like their mild, well balanced flavours and consistency across their outlets and was at Song Fa Bak Kut Teh Novena Square to savour it. I’m sure fellow Chiefeaters have reviewed this place, just that it’s a symbolic pivot in my tastebuds (maturing?) for me.
The carte blanche Klang, Hakka and other Malaysian variants of herbal BKT vs the peppery fervour of the Southpaws. If there’s a brand (sect) of peppery BKT that has helped open my palate over the decades- it’s this, Song Fa. No, not the Founders, Balestier333 and other more limelight hogging brand.
And when it comes to peppery soup bases, this is amongst the best (most consistent, blended balance) for me. There are others spicier, kickier, punchier for sure – but Song Fa’s is a peppery symphony orchestra.

And borne of that soup is another firm favourite – the pig tummy soup. Yes there’s a silkier, more premium version to be had at Imperial Teochew, but this version comes darn close. Consistent 7/10 over the years – I’ve tried 6-7 different outlets and it’s all the same. I’m sure they’ve a central kitchen for the soup base (secret sauce), and that’s alright!
