I think Sushi Nakamura does the best fish noodles in the whole of Singapore. Albeit not a Teochew version. Chef Kazu has reimagined a food court staple with Japanese finesse with this dish. The broth is so inviting, the richness and depth of the fish meat and bones boiled for hours and hours – hits you instantly. Yes, you should smell your food before you dig in. Did you know that Jap chefs especially at high-end Omakases don’t allow diners to put on heavy perfume?!
Granted it’s more expensive than your usual fish soup / noodles – but it’s worth every penny!
Instead of thick meehoon, you get springy somen. Instead of batang fish you’re getting at least some myriad of sea fishes like mackerel, and tuna

Then you get spring / summer zests from Japanese yuzu
