Dinner at Chamoon Hot Pot, Scott’s Square. This is probably the fanciest hotpot I’ve had in Sg; this China high-end chain hits home!
There’s no denying the freshness of the premium quality ingredients - the grouper fish ie how it was sliced and presented was a spectacle in itself.
The soup bases don’t come cheap - I went for their nourishing pot (which had a floating seahorse and cordyceps thrown in) which costs SGD68 to start - just the soup bases.
But if you want a good hotpot broth - it’s well worth it. It’s not going to nuke your tastebuds like mala. The only way to describe Chamoon’s soup broths = finesse.
The tomato broth my daughter had was even more distinct. The simpler the ingredients, the starker the difference (in quality).
Another standout was their mushrooms. Yes, their fungi offerings (wild ones I can’t even name) are fantastic. The matsutake fried rice was a solid 8/10!

The mushrooms and morels they dished into your (personal) soup pot was sublime. They came in all shapes and sizes, but were all good! 8/10
I recall having similar medley of mushrooms in China - but first time in Sg. In Southeast Asia in fact. Doesn’t come cheap though. And you know it’s approved by all the local Chinese (just close your eyes - you will be transported to Beijing or Shanghai).
Chamoon just opened their doors for business in Sg not too long ago - but oh so they mean business! Solid 7.5/10 right off the bat.
