I went to Drip Hilton KK for something sweet after dinner and discovered a piece of food history I hadn’t known before.

The brownie was invented in a Hilton hotel.

Well, technically, there’s an interesting wrinkle to that story.

The brownie was created in 1893 at the Palmer House in Chicago, when Bertha Palmer asked the hotel’s pastry chef to come up with a cake-like chocolate dessert that could be packed into boxed lunches for women attending the World’s Columbian Exposition. The result was what Hilton describes as the first American brownie.

The Palmer House itself predates Hilton by decades; Hilton only entered the hotel business in 1919. Palmer House subsequently became part of Hilton and remains a Hilton hotel today. So saying *the brownie was invented at Hilton* needs that little historical qualification — but Hilton can legitimately claim one of its hotels as the birthplace of the brownie.

Which makes ordering a Hilton Brownie in Kota Kinabalu unexpectedly appropriate.

The brownie at Drip was a substantial square of dense chocolate, studded with nuts and topped with a flourish of chocolate and a little edible silver.

Then came another pleasant surprise.

The listed price was RM16.98 before tax, but I ordered it after 6.30pm, when Drip gives a 50% discount. That knocked RM8.49 off the bill. Add RM0.51 SST and my brownie cost me exactly RM9.

Nice!

There’s also something I like about this little corner of the Hilton. Drip doesn’t feel like somewhere I need to rush through. The seating, lighting and quieter hotel surroundings give it a chilled-out feel that’s quite pleasant when you just want to sit down after dinner.

Eating a Hilton Brownie becomes a little more interesting once you know that the brownie originated in the kitchen of a hotel that is now part of Hilton. It’s an unexpected bit of culinary history to go with dessert.
