From the moment I took my first sip of the soup, I knew I was in for something special. The rich, umami flavours that permeated from the prawn shells and head, often referred to as “head butter,” lent the broth a deep orangish hue that hinted at its complexity. It was clear that great care had been taken in crafting this base, resulting in a soul-warming concoction that left me craving for more.
The tender chicken, as expected from a top-tier Kai See Hor Fun, further elevated the dish. However, what truly set MJ Wang apart were the bean sprouts and chives, along with the addition of chicken oil. These seemingly simple ingredients added layers of flavour and texture, elevating the dish to new heights of deliciousness.
As is customary with the finest Kai See Hor Fun establishments, all the ingredients at MJ Wang are sourced from Ipoh, ensuring authenticity and quality. And of course, we can’t overlook the role of the limestone, which impart their magic to the hor fun, resulting in a smoother and more satisfying texture.
