Toriya Yakitori is a restaurant that I have visited more than any other since my first visit in April 2024. To date, I have dined there 6 times. And this time there were some seasonal delights.

Yam Gratin

The yam gratin topped with seaweed strips and a raw egg yolk. It arrived at the table still gently bubbling in its cast iron dish, the surface marked with a lattice of creamy mayo and generous lashings of finely cut nori. The moment we stirred the yolk into the mix, the whole dish transformed into a velvety, savoury custard. The grated yam had a soft, stretchy texture, almost like tororo but creamier, with a mellow sweetness that paired well with the briny edge of the seaweed. It was unlike anything we’ve had in a yakitori setting — indulgent, textural, and comforting in a very Japanese way.

Lion’s Mane Mushroom Skewer

Another standout from the night was the lion’s mane mushroom skewer. Grilled over charcoal, it had a lightly charred exterior while retaining an airy, fibrous interior that made it feel almost like a fluffy scallop. The mushroom’s natural umami came through beautifully, with a tender chew that held up surprisingly well for such a delicate ingredient. It’s not a common sight at yakitori joints, which made this feel both experimental and refreshing. A drizzle of light mayo on the plate gave it an extra savoury boost without overpowering its earthiness.
