Crystal Jade, the group is one of the Big 3 in Singapore – and coincidentally the first one we regularly frequented in our late 20s- our initial years in the red dot. The quality went down after a few years and we discovered the Imperial Group. In 2019 , Crystal Jade Group has finally relaunched its flagship fine dining restaurant Crystal Jade Palace, located at Level 4 of Takashimaya Shopping Centre.
The coral trout (Tungsing Pan) was stuff of legend. I believe most premium fish would be cooked/ served this way in the near future. I first recall having it done this way – in Bangkok, in a Michelin starred Chinese restaurant in Asok.

There’s a claypot with flavourful broth first made in front of your eyes- the stock today at Crystal Jade was prawn roe and dried fish pieces. The “live” fish is presented to the table and then filleted by the chef.

The fish slices are then cooked very briefly to your liking – the same way high end Chinese restaurants serve geoduck, and lobster etc. The done-ness is somewhere between sashimi grade and “well done”. The fish was easily 7.5/10 (about $26 per 100g – so be wise choosing your fish!)

I think the coral trouts (or the Garoupa family is most suited for this). There’s the turbot as well – but prices might be even steeper. Regardless – we’ve entered the Renaissance of Crystal Jade Palace again. Highly recommended.
