Nestled in the opulence of TRX (only the second time for me), this particular outlet of Souper Tang TRX looked posh. True to their their herbal soup background, the first few pages of the menu were dedicated to their premium broths - 90% of these had some form of ginseng or Chinese herbs infused with eg the herbal chicken ginseng soup we got. But I could not resist trying their mountain pepper pig tummy soup.
We didn’t get far past their must-haves and chef recommendations - as we normally would ask the team to ‘surprise us’ or do their Omakase best. Souper Tang TRX had a few must-tries on our table shortly after - these were the chicken in ginger wine (Hakka!), fish slices in Bentong ginger, and the tungpo yoke in bread wrap.
The mountain pepper pig tummy soup was 6.5/10 thereabouts. I personally found it a little too diluted for my liking.
The ginger wine chicken was good - the lily bulbs soaked in all the goodness. This was a 6.5/10
The tungpo yoke was succulent and sweet, perfectly caramelised at 6.5/10
The vegetable dishes were deftly executed - the okra and French beans were good at 6.5/10 respectively. The okra would be the stand out amongst the greens.
Oh, the bean curd dessert is a winner. The winner by far for Souper Tang today. This was easily a 7/10. It reminds me of the bean curd structure and bounciness, including the creaminess of the Rochor Road bean curd in Singapore. But this is better.
I can imagine coming in for just soup and dessert (this), and some good Chinese tea like their high mountain oolong. Overall, a pleasant dining experience at Souper Tang, this outlet weighs in very nicely at 6.5/10
The staff at Souper Tang did mix up our orders a few times - we suspect they’re not used to the heavy CNY traffic. We have been told by others that TRX is generally quieter, especially during weekdays..
