We’ve been frequenting this Japanese hotpot, Tsukada Nojo, for about a decade - and have found it consistently good (and simple). But as with all things Japanese, comes with a slightly heftier price tag.
The stock is stewed more than 8 hours until the chicken bones are fully dissolved. Eventually, chicken stock turns into a smooth and silky collagen pudding. The BIJIN NABE is a combination of the freshest vegetables, seafood and chicken cooked in Golden Collagen Chicken Stock. They ensure that collagen will be the key of your beautiful skin and health.
The soup tastes cleaner than that of beauty in a pot’s - another popular protagonist of the collagen broths.
I’d rate it 7/10 over the years.
Another hack - I got from the Taiwanese having their hotpot - order a bowl of rice and boil down the broth when you’re done with the main feast, to make congee! Let all the essence of the ingredients and the collagen soup base produce you magical bowls of congee - promise you won’t regret it. Thank me later.
