But the flavour of the minced meat is brought out more in the dry version (i tried both soupy and dry) and when mixed with the noodles, is a superb hakka version of smooth beef zhajiangmian (炸酱面) and not over salty, just right. The beef and ball mix includes tripe, beef slices and beef balls - and of course the finely minced beef. One will understand why the long queue"
