The cocktail scene is evolving - previously catering to Gen X and Y. Now younger ones don’t drink nearly as much - there’s a shift to tea based alcohol. Mashing east Dindong Oolongs and Dahongpaos with Wild Turkey 101 and other aromatics to produce a new gen of cocktails.
Bars of the future won’t display their array of branded alcohol bottles - the taste is all that matters.
