Penang Kuih Kapit is also known by another name, Eng Seng Kuih Kapit. Kuih Kapit (Love Letters) is the most popular snack during Chinese New Year. If you have not had enough of it, this is the place to get some very nice, crispy and fragrant kuih kapit in Penang all year round.
The proprietor, Mr Quah Eng Seng and his wife have been selling kuih kapit for 21 years. Besides the usual kuih kapit, their signature kuih kapit with meat floss filling is also available.
When we were there, their female staff were busy baking the kuih kapit in front area of the shop under the watchful eyes of Mrs Quah. They work in unison, spreading the batter thinly over the scissor-shaped iron moulds, pressing and locking them, flipping them over the hot charcoal stove, opening and gently lifting the paper-thin waffle-like piece and tossing it to their partner to fold it before it hardens.
Mrs Quah kindly shares a tip with me on how to get the best taste out of the kuih kapit. Do not eat it when freshly baked, they will not be so fragrant. Leave them in the tin or container for three to five days so that the oil from the santan (coconut milk) comes out making it taste very good.
