Chiefeater doesn’t do wine and cocktails but White Shades at BoonTat Street is an icon. Ranked 31:50 world’s best bars and winner of cocktail mixology. Jiawei showed us his skills – whipping up an Omakase moutai, Chinese based cocktail to my palate.
The cocktail scene is evolving – previously catering to Gen X and Y. Now younger ones don’t drink nearly as much – there’s a shift to tea based alcohol. Mashing east Dindong Oolongs and Dahongpaos with Wild Turkey 101 and other aromatics to produce a new gen of cocktails.
Bars of the future won’t display their array of branded alcohol bottles – the taste is all that matters.
